Thai Blackened Salmon with Satay Sauce

Salmon 1 Side of salmon 1 Pkt Waitrose cooks ingredients thai mix 3 Tbsp Tamari 1 Tbsp runny honey 1 Lime Satay sauce  1 Tbsp of coconut oil (always aromafree, Higher Nature is my favourite) 1 Heaped Tbsp crunchy peanut butter  1 Tin coconut milk (i really like Biona i find others taste fake and are full of stabilisers and thickeners) Zest and juice of 1 Lime 2 Tbsp Tamari 1. Rinse and pat dry 1 side of salmon 2. Lay salmon skin side down. Sprinkle half a packet of Waitrose cooks ingredients thai mix on the top. Asian Salmon Tartare

serves 4 Tartare Mix  400g (100g per person) sashimi grade salmon finely diced (Local fishmonger is handy for this) 2 spring onions, finely sliced 1 Cup cucumber, finely diced  Dressing Juice of 1 lime 1 Tbsp runny honey 2 Tbsp Tamari (or soya) sauce 1 Tbsp finely grated ginger 2 Tbsp toasted sesame oil 1. in a clean bowl mix the fish with the spring onions and cucumber.  Add all the dressing ingredients into a clean jar and shake until combined. Pour over the salmon 15 minutes before serving and mix well.  Serve in an avocado half or on slices of cucumber as a canapé. You can also serve on mashed avocado using a presentation ring.
